Pro Tip: add a handful of your favorite herbs & spices and/or dehydrated onion flakes to the beef while sauteing for some extra flavor

Nice Greg, thank you! Whenever I can meat or meals in the pressure cooker, I seal the lid on the canner, turn the heat up to high, and let the steam vent for 10 minutes before putting the weight on. I love that it's a pretty easy process and you get so much out of it!

Just an FYI - there's a difference (both price and structural) between a pressure cooker and a pressure canner. Make sure you get the canner, as you can also cook in it, but typically not vice versa... https://www.healthycanning.com/pressure-cookers-versus-pressure-canners/

And: if you pick up an old pressure canner on the cheap at a yard sale, just know that you are going to HAVE to buy new gaskets and take the unit to your local Dept of Ag Cooperative Extension Service to have the pressure gage tested for proper operation before you try to use it. If you don't, you're setting yourself up for a pressure canner disaster...

And for canning newbies - if you have one of those fancy glass top stoves, well - you're S.O.L. for being able to use any but the very smallest pressure canners, and even that might be iffy. Those glass top stoves are not made to take the weight of a fully loaded pressure canner. I found that out some years back, after I got a glass top stove and then the next year decided to start canning. So, I picked up a used conventional stove off Craigslist and it lives on the screened in back porch. Not quite as convenient in terms of having the sink & running water right next to the stove, but not steaming up the whole house in the middle of the hot summer when you're canning all day more than makes up for that minor inconvenience. My potting sink & garden hose work just fine for outdoor cleanup :)

I do not do any jar prep. But I know there are different methods. Kellzilla just mentioned sulfites. I think there are honey methods. Everyone used to do this.

Yup i watched it, everytime they insert a book or now "game " to help people conceptualize the policies when they do their workshops / warGames. I was reading some Horizon 2020 EU summary They always bring up HG Wells or Huxley has recommended reading, its creepy and transparent. Have you notice Yuval Harari is leading the Isreal protest? Something is afoot this looks like a massive Coup is in the wind.

So much going on and none of it looks organic.

Sterilizing them by pouring boiling water over the clean jars in the sink is how my farm family cans.

I used sulfite and water in the past, Same process if you ever made homemade beer or wine. Unless you had Kifir or mushroom or anything growing in those jars or any contact with Coliform i don't think there is a need to steam them, up to u i suppose.
